Some lots are classic washed coffees. Others are fermented with an added yeast culture, or in sealed tanks where the oxygen is replaced with nitrogen, before they are washed or dried.\u003c\/p\u003e\u003cp\u003eWe have mainly bought coffee from Huila and Risaralda. The varieties range from Caturra, a natural mutation of Bourbon discovered in Brazil between 1915 and 1918, to cultivars such as Ombligón and Striped Red Bourbon.\u003c\/p\u003e\u003cp\u003e\u003cstrong\u003eWhat does Colombian coffee taste like?\u003c\/strong\u003e A classic washed Colombian is sweet and balanced, with a fresh, fruity acidity. The fermented lots go further, with tropical fruit, blackcurrant and more pronounced sweetness.
