The station buys cherries from around 615 smallholders farming half a hectare to two hectares each, grown at 1,950 to 2,100 metres. The station manager is Atara Wako. Imported by Nordic Approach.\u003c\/p\u003e\n\u003cp\u003e\u003cstrong\u003eVariety and process\u003c\/strong\u003e\u003cbr\u003eHeirloom, the local cultivars Welisho and Dega, washed. The cherries are pulped, wet fermented for 72 hours, graded by density in washing channels and dried in thin layers on raised beds for around 10 days.\u003c\/p\u003e\n\u003cp\u003e\u003cstrong\u003eTasting notes\u003c\/strong\u003e\u003cbr\u003eWhite peach, mango and floral.\u003c\/p\u003e\n\u003cp\u003e\u003cstrong\u003eBrewing\u003c\/strong\u003e\u003cbr\u003eGreat on V60, Aeropress and Chemex. As filter at 94 °C and a 1:16 ratio the floral notes stand out most clearly.
