Washed heirloom from Chelbesa
Yirga Bloom comes from Chelbesa Washing Station in Gedeb, Gedeo, the area most people know as Yirgacheffe. The station sits at 2,100 metres and buys cherries from around 615 smallholders, each farming half a hectare to two hectares at 1,950 to 2,100 metres. None of them has to carry their cherries for more than 40 minutes to reach the station.
The variety is heirloom, the local cultivars Welisho and Dega, grown as semi-forest and garden coffee on red, fertile soil. The station manager is Atara Wako, and the coffee is imported by Nordic Approach through their sister company Tropiq in Addis Ababa.
White peach, mango and floral
The cherries are pulped on a traditional disc pulper and sorted by density before fermenting in water for 72 hours. They are then washed and graded in channels, soaked in clean water for two hours and dried in thin layers on raised beds for around 10 days, with hand sorting along the way.
The result is the clean, bright Ethiopian cup I am always looking for. White peach and mango up front, a floral side of hibiscus and rose, and a juicy finish. We roast it light for filter, where the florals stand out most clearly. As espresso it turns sweet and juicy.
