Colombia is one of the most exciting coffee origins right now, because many producers work actively with fermentation. Some lots are classic washed coffees. Others are fermented with an added yeast culture, or in sealed tanks where the oxygen is replaced with nitrogen, before they are washed or dried.
We have mainly bought coffee from Huila and Risaralda. The varieties range from Caturra, a natural mutation of Bourbon discovered in Brazil between 1915 and 1918, to cultivars such as Ombligón and Striped Red Bourbon.
What does Colombian coffee taste like? A classic washed Colombian is sweet and balanced, with a fresh, fruity acidity. The fermented lots go further, with tropical fruit, blackcurrant and more pronounced sweetness. In Colombia, the process matters almost as much for flavour as where the coffee grows.
