Colombian fruit sweetness from La Piragua
Honey Bloom is a naturally processed coffee from La Piragua in Palestina, Huila, Colombia. Here Arley Vargas works alongside his father, Alexander Vargas, on the family farm, where the focus is on high quality, sustainable coffee production and careful processing. The coffee is Striped Red Bourbon, a naturally occurring variant of Bourbon known for its beautiful red colour with orange stripes. In the cup you get a sweet, fruity coffee with notes of strawberry, mango and honey.

Sweet, fruity and blooming
At La Piragua the family uses Brix measurements to make sure the cherries are picked at optimal ripeness. After harvest the coffee first goes through an oxidative fermentation for 72 hours and then an anaerobic fermentation in barrels with degassing for 98 hours. Finally the coffee is dried gently in drying sheds for 15 to 20 days, so the quality stays stable, clean and consistent. The result is a coffee with an intense, yet balanced fruit sweetness, clear floral notes and a long, honey-like finish.
